I am going to a memorial day cookout. I had an idea for layered jello (it worked in the past), but I did not factor in my own impatience. I let the blue on the bottom set (mostly) and let the red cool (a little) before I poured it on, and I thought I remembered that I had to pour the new layer down the side of the bowl. But when I did that it just sort of dug a path under the blue down the side and pooled on the bottom a little. Now I have a bowl of vaguely layered purplish murky jello and I wonder how I ever successfully pulled off the rainbow one in the past.
But I'm also making a Fruit Plate!
And my mom bought the giant bratwurst-sized Hebrew National hot dogs, so I'm pretty stoked about that :onlymoderatelystoked

I just ate a brot stuffed with cheese wrapped in bacon and deep fried on a bun smothered in cheese onions and some sort of fancy german mustard with a side of green chili and choizo cheese fries. God I feel like I'm about to die but damn was it good.
Best part is I'm about to hop in the car with the fam for a there hour ride home. :lol

So a few months back I found out I was allergic to wheat. We're not talking "oh i have a tummy ache. I must be gluten intolerant.", i get horrible skin rashes from eating wheat. this wasn't a sudden thing either. i've had severe eczema most of my life, i just figured out what triggered it in february.
so, now i eat gluten free. most of the time it pisses me off because the replacements for the things i like to eat taste fucking horrible. the tasty-cake gluten free chocolate chip cookies? they taste like crunchy vegetable oil with chocolate chips. gluten free bread? tastes like bland nothing (except udi's, that shit is GREAT). the rice pizza crust? tastes like rice pizza crust. so in a sense it's good because it forces me to eat healthier.
onward to tonight's fabulous dinner.
i can't really cook often here because we live with other people and it's hard for me to really cook without cross-contamination so most of my meals are pre-packaged and or salads.
this evening for dinner i decided to have pancakes. typically i use pamela's pancake and baking mix, so far that's my favorite because the gluten free bisquick is ehhhhhhhh. well, i mix my pamela's mix and i decide to crumble up and throw in the rest of my blueberry stilton cheese. it tasted awesome.

I was all excited because I had a bunch of stuff fresh from the garden and was going to make it all for dinner. I picked a small basket of blackberries (and got the SHIT scratched out of me in the process) and agonized over what I was going to do with them...pie? preserves? sauce?
Finally I decided that I was going to make sort of a crumble thing, and because I wanted it to be extra good I disregarded my own recipe for the crumble stuff and went with someone else's. Long story short, big mistake. It's dry and, even though I added cherries to sweeten it up a bit and add more liquid, it's sour :(
Anyway, I also had roasted summer squash in marinara sauce, and garlic bread. The rest of the produce I gave to my mom (wax beans, strawberries, zucchini, peas).

blueberry stilton is not like regular stilton. it's sharp and creamy and has lovely blueberries in it. i think you're thinking of blue stilton which is like most blue cheeses and has veins in it.
Chojin, i have no idea. i am certainly not thrilled about it, but it could be worse. avoiding wheat/gluten isn't too hard these days, liking doing it is another story.
Kitsa, i'm sorry about your blackberries :( you should donate it to someone you don't like. but it sounds like your garden is very lovely and filled with delicious! do you salt your squash when you roast it? i've always hated squash and someone reccomended salting it and frying it.

When I want italian-ish food, I just pan-sear it with some garlic powder (never garlic salt!) and serve it with marinara sauce. I like it better than pasta.
When I'm cooking stir-fry, I do it at very high heat, in the thinnest gloss of peanut oil, and serve it with peanut sauce or ginger dressing.

I've been eating too damn much the past couple of days, and all of it wonderful. There's a certain deli that makes the best roast beef sandwiches on the planet...I normally am not big on meat, but omfg. They shred the lettuce superfine, so it's more like fancy-shredded cheese, and there's a big pile of it on a toasted bun with homemade mayo. Fucking amazing sandwich.
So I had that last night, and then for lunch the past two days I've had roast turkey and stuffing. I feel like I'm living some sort of bizarre Thanksgiving thing out of season.

And I've had keratosis pilaris most of my life, which is a bunch of small bumps on my skin and it looks like it's going away since I stopped eating wheat completely also. Have you found any kind of recipe for pizza crust that is good? Every time I've made pizza crusts from gluten free mixes from the store. I've tried 4 different kinds and they all taste yeasty, and that aftertaste stays with me for over a day. Also, have you also noticed that gluten free breads taste like stale bread?

Udi's Gluten-free whitebread tastes great fresh without being toasted. but once those breads get frozen you HAVE to toast them. All other gluten-free breads need to be toasted. Honestly I never buy anything but Udi's nowdays.
pizza crust is tricky. I don't think i would trust gluten-free pizza crust mix personally. now, i live with my soon-to-be in-laws. I can't do alot of cooking here so i haven't been able to experiment. if you look online there are lots and lots of recipes for gluten free pizza crust. Most of the manufactured ones are rice flour based. they're kinda ehhhhh. the best one i've had so far was at a place called the Mellow Mushroom in raleigh nc. theirs tasted potato flour based. it was sweet and soft! it gets soggy, but i put it in the fridge for a couple of days and reheated it and it was still good.

I had a sandwich at Friday's. It had some sort of whiskey sauce on it. It was good, but I spilled it on my shirt. Then I smelled like that sauce all day because I couldn't get all of it eradicated.
Then I saw someone I haven't seen in months, and he got to see me looking like a slob with drips of sauce down my shirt that were still wet from me trying to scrub them out. Also, I smelled like whiskey barbecue sauce. 100% class.

"Fried Coke" at a fair.
All it is, is funnel cake batter with coke syrup in it. They make it like a normal funnel cake, flip it around in a ridiculous amount of cinnamon sugar, pour more coke syrup over top, and finish it off with a big gob of whipped cream and cherries. It was ok, I guess, as funnel cakes go. I hate greasy stuff so I don't think I could do this more often than once a year. It was hard to eat because it was so sticky and sugary...the ones I'd seen before were like donut holes, and that's what I thought I was getting.

I went to this creepy place called Buffalo Jack's. It's old and dark, and there are all these taxidermy animals looking down at you reproachfully while you eat.
I ordered a turkey club sandwich and the turkey actually had shards of bone in it. Bone and hair in food are really nasty. Also, the fries were still frozen.
I shall take my business elsewhere.

I made an Indian cauliflower dish that I make all the time, and it's usually ok, but this time it turned out fucking horrible for no reason I can think of. The only thing I changed was that I took the oil down from five tablespoons to two, because I thought it was too oily before.
It was completely bleh :(

I don't know about the currywurst but pommes frites sound okay. They're best right off the cart.
I'm eating some chex mix of my own invention. I hate the squiggly stick things and the rye chips in chex mix, so I just made one that's all chex with some m&ms and peanuts in it. I forgot to get pretzels for it :(

Got a new cookbook for French macaroons (as opposed to the coconut-and-condensed-milk blobs that haunt Passover). I love macaroons, but they're insanely effort-intensive and they take an entire day to make, once you factor in the whipping and the piping and the drying and the baking and the setting and the filling. So I've got the stuff to make pistachio ones, but I haven't gotten to it yet because I haven't had an entire day to spend on one batch of cookies.
I'd like to make eggnog ones, too, but my eggnog flavoring oil is 2 years old and I've got to find some new.

I had nothing because although my sister said she would make the main course without gluten, she used cream of mushroom on the roast. And everything else she made had gluten. So I ate absolutely nothing. Who the fuck makes a roast on thanksgiving over turkey anyways? Savages, that's who.

Thanks. I didn't brine the turkey because one year (under the influence of chef Michael Ruhlman, whom I'd just heard speak a week or so before), I brined it and forgot what that would do to the gravy. The resulting salt-sludge turned me off brining for the rest of my life. The turkey was ok...no better, no worse. I went back to rubbing the cavity with kosher salt and stuffing it with mirepoix and it turns out ok often enough to stick with.
Last year I went nuts and made a really ridiculously involved chestnut stuffing that tasted great but took forever. I never want to roast and peel chestnuts again. This year I simplified it, got precooked vacuum-packed chestnuts, and it turned out better. Here's exactly how-
-Buy one box of stove top turkey dressing and one box of sage dressing.
-Make according to directions, but instead of water use chicken broth. Just use both boxes of dressing dumped in together.
-While you're waiting for the broth to boil, saute diced celery and onions with chopped roasted chestnuts in butter until they're softened and golden-brown on the edges.
- When the stuffing is at the "take it off the heat and put a lid on it to steam it" phase, stir in the celery, onions and chestnuts until they're well-incorporated in the rest of it. Put it in a greased casserole dish and bake under foil for the last 45 minutes the turkey is baking. If it looks dry, add more chicken broth. To crisp it up, take the foil off and raise the oven temp for a few minutes.
Thank you for the compliments. I could have done a tablecloth and nice dinnerware, but my kid would have had it all ruined in minutes and I didn't need that sort of aggravation.

The main reason I use a brine is because I cook such a large bird (up to 20lbs) that it would be dry if I didn't.
I also add a bunch of whole black pepper, ginger, and allspice to the brine and after about 24 hours it really soaks through the whole bird and adds a lot of flavor.
For gravy I cook the giblets in a skillet, then chop them super fine and add chicken broth and flour.

Sara Lee "mince" pie. I think most "mincemeat" has contained little or no meat for a very long time. This is like a dark spicy apple raisin thing. It's ok I guess. I like it better than the English mince pies I've had because there are no mystery hard chunks or fig newtony seeds.

Not like the insufferable ones on TV who dumpster dive for coupons and then take 40 carts to the checkout, but more in that direction than the occasional 10 cents off for something. Tomorrow I'm going to try and do about $120 in food for less than $25. Pretty sure I can if everything works out. The other day I managed 7 tubes of toothpaste and 7 toothbrushes for 28 cents, so it can happen.
Since it's a hobby I've managed to find that combines math, food and shopping for food, and it regularly scores me free shit, I'm fairly happy with it.

This is actually better than shoplifting because in some instances the stores actually pay you to take the stuff off their hands. It just takes a lot of work to figure out where you can accomplish that. If you don't want to keep the item yourself, which I guess you wouldn't, being a communist and all, you could always donate it to the needy and count the footwork as part of the donation.

There are also coupons this week that would enable you to get a glucometer for $1 (sending them to a free clinic) and various hygiene products for nothing or nearly nothing. I've had dental floss that cost less than the coupon for it, resulting in an "overage" I could use to pay for other things. There's a seasonings packet that's marked 77 cents, if you print out the dollar coupon and buy several of them there's a dollar in overage you can spend on something else right there.
It's effort-intensive, but it's also nice to walk off with a full cart of groceries for less than 20 bucks.

Arugula salad with pear slices and warm red quinoa, topped with homemade dijon vinaigrette ( 2 tsp dijon, 1 tsp balsamic, 1 tsp red wine, 1 tsp honey or agave, 1 tsp water), fresh fruit on the side. The dressing and the pear tone the arugula way down.
It was from a recipe in the Happy Herbivore Everyday cookbook, out of which I've tried 7 meals with no duds so far.

I went to a Strawberry Festival west of here. There were strawberry burritos, strawberry cannoli, strawberry salsa, strawberry bbq sauce, deep fried strawberries, all manner of strawberry pastries, strawberry drinks, etc etc etc.
I didn't get any of the strawberry stuff because I went one year and saw behind a food tent that they were just cracking open store boxes of berries and throwing them right in the food without washing them, and that freaked me right the hell out.
I almost got a donut but then I saw they were like red velvet cake and that's got an entire bottle of red food color in it so I didn't do that either :(

Tried Kashi's Mayan Pasta Bake. It was ok. It was a fried plantain and some pumpkin seeds on top of a sort of casserole of polenta, quinoa, black beans, sweet potato and enchilada sauce. It tasted better than it looked; frozen stuff always looks like a train wreck compared to what's on the box.

When you cut stuff out of your diet you'd be surprised at what starts sounding good. If you spice vegan stuff right, it's pretty good, pretty complex. Pretty much the only flavors meat has going for it are...what, salt and fat, basically.
And I was mistaken about the name- it was Mayan Harvest Bake. The plaintains had a golden-brown coating and it looked, at first glance, like chicken on a bed of rice.

Eh, I just had to take a whole class on the neurological perception of "yumminess" based on caloric density of foods because biologically we're lazy fucks who want the biggest bang for our buck.
Fat is 4,000 calories a pound, pretty much, regardless of type. Salad greens are 100 calories a pound.

I basically used this recipe (http://www.food.com/recipe/makoto-style-japanese-salad-dressing-60315), and I might have gotten myself in trouble trying to sub for the oil (I am trying to get rid of any excess oil, stopped cooking with oil, etc). I used unsweetened applesauce in place of oil, and all I had were red onions, so that might have made a difference.
It didn't say exactly how much ginger root "a peeled piece" was, so I might have used more of that than it called for, too.
idk, in comparison to the original I would say it was...
less "umami"

tbh i think the secret to the restaurant ginger stuff is they cook it or they let the vinegar make it soft (pickled?) or they used jarred ginger. It really has the consistency of the ginger in a jar kinda. Fresh ginger will never taste the way it does in the restaurant. Fresh ginger is all fibrous and extremely hot and has that taste like those wetnaps they give you at steak houses

it could be that. If you just let the ginger soak in some vinegar for a while it should soften it up and help to "cook" it. i dunno though that stuff is delicious.
Also i think it has orange juice in it but maybe thats just from the vinegar

Right now I'm drinking an awesome thing that tastes like a chocolate milkshake but is not.
It's a chopped up frozen banana, a squeeze of agave nectar, about a cup of almond milk and two spoonfuls of unsweetened cocoa powder in a blender. Sometimes I add a spoonful of peanut butter, but I was feeling fat today so I didn't.
Otherwise, this stuff is great.

Reese peanut butter cup, braws. I've already eaten most of the good leftovers, like the cabbage rolls, lazy cabbage rolls, perogies, ham, and stuffing, so now I just have turkey and some other stuff left. Fuck that. I'D RATHER STARVE!

Absolutely I can.
You take a big pot. Or a big crockpot. Whatever.
For every "recipe" of chili, you need-
1 can or bottle of beer. I normally use Sam Adams or Yuengling.
1 of the big cans of BROOKS CHILI HOT BEANS. Important. Only Brooks. None of the others season it right.
1 lb of cooked and drained ground beef OR one bag of Morningstar meat crumbles if you don't do meat.
1 8-oz can of tomato sauce
2 cans of "chili-ready" tomatoes, I usually get RedGold or RoTel brand, the kind with the diced tomatoes and chilis in there.
Just dump everything in together and cook it on medium-high until it bubbles, then drop it to a simmer and let it cook down until it's nice and thick. Excellent with tortilla chips.

The problem is that Brooks Beans n'existent pas where I'm at. I'll work out my own thing, then, I guess.

You can use the seasoning packets in their stead, but it makes the resultant stuff a little darker and spicier.
