Easiest is hard to say. Too many to list. There are a million three-chord songs out there.
Hardest.... I used to be able to play some of the solos off
Rust in Peace clean and strong. That's some pretty challenging stuff. Jazz is very difficult. I never had the patience for that shit. You have to be a hand contortionist, or have Andre the Giant hands to do some of that.
