Shark Will Win.

The Shark is Areodynamic, the tail works as a plane's tail rudder. Allowing him to turn, as if he was in the water.
True, sharks loose theath, not because they are brittle, but because they are not hooked it. They are covered with skin, that if looked at closely, is as sharp as the teath.
The Great Sharks are hunters, they attack at speed, fast quick bite, then they let go, and let the prey bleed to death.
After it's prey is dead, a great white bites, and then rips it in half with one shake of it head., and violently shakes only its head back and forth, and the razor blade teeth slice pieces off.

Crocs mimic logs, and snap and hold to the prey. Killing them by drowning. Crocs teath are like grips, and they never do any actual biting and chewing. They twirl around and around to rip of chunks.

The Shark will win. It's movements in the water are more akin to a hunter. The Croc, with all the extra body parts, will be slowed down. It's rate of climb will be greatly reduced, and it's turns will have to be slow, or the whip around of the tail, or legs, will send it into a spin.
