I think it would work but it wouldn't be very strong. The mechanism is exactly the same as on a real switchblade, they've even got a lock, but they're all a bit tinny. It would look just like a real one if you did it well enough though.

Although I've just realized that they don't lock open like a real one would. The lock they've got just stops them from coming open accidentally. So I wouldn't recommend using one in a fight or you'll probably just chop your finger off.
