chefs work horrible hours.
i know lots of chefs! one of my bestest buds is a chef who has no sense of smell
oh and even though the hours suck, i've been told that there is no greater satisfaction than getting to the point where you run your own kitchen in your own restaurant with your own recipes and being successful.
