Panning in an audio sense refers to the relative levels of volume in two sources. There's a large range between them, but there are two definite volumes being adjusted. You personally are still recognizing 'binary' gender definitions, just giving a 'notable mention' to anything in between.
But that's retarded anyway. It's obvious that people are either male or female, regardless of whatever feelings they have.
