I don't know about the floating poop question but I have something about farts to say. Never ever fart in a wet suit. I did once when I was diving and it doesn't leave the suit, it just stays as a huge ass bubble on your back. It sucks real bad. I would guess that the poop question would depend on the type of poop that it was. If it was like one of those nasty taco burrito farts it would probably sink but if it was a vegetarian fart there is a good chance that it could float.
