I worked in a BBQ kitchen where we made everything from scratch. Sweet potato pie was on the menu. What sucks is, I can remember what went into it but, not the amounts.

I've made mashed sweet potatoes with brown sugar, minced sage and vanilla at a different restaurant. I thought they were pretty good. We actually used real vanilla beans instead of extract. Chipotle peppers sounds weird but, I'd try it.

It doesn't kick you in the back of the mouth until a few seconds after you bite. Use 1 pepper per pound of potatos and 1 tbs of ADOBO!

My only experience with sweet potato pie is the turnovers that Bojangle's (the south's favorite/ my most hated fast food joint) serves. Those come frozen . I'd love to try some of the real stuff.
