South Beach is more of a diet that's guidelines for what's good for you. Certain kinds of fat are good for you in moderation (legumes, dairy), and so are certain carbs (vegetables, legumes again come to mind). So, even if you don't want to diet to lose weight, I'd recommend picking up the South Beach Diet book, because it's written by a cardiologist and intended to help you eat healthy instead of burn fat (Atkins), although the two generally go hand-in-hand.
But for general guidelines, eat lots of lean meats, cheeses, vegetables, and nuts and avoid sugars.
