Check out Photoshop Color Correction by Michael Kieran

^ That's the publisher's site, but I'm sure it's cheaper at amazon.com

It is one of a handful of books my aunt/boss swears by, and she's been doing digital art more than 15 years. The book is a bit dated (2003), but the principles and techniques are still relevant. It even has a section on printer, monitor, and scanner color management.
