I'm really sorry for you, George. You're a good guy with a great heart and it makes me really sad that someone you love both took that for granted and abused it.

For the kids' sake, I'd recommend you distance them from their mother ASAP, whether that means staying with parents or friends or booting the wife out of the house. Whether the legal battles are messy or whatever, it's clear where her priorities lie when it comes to enriching their lives and quite frankly the less they learn from her, the better. The only way to break the white trash cycle is by distancing yourself from it, so it's good that you plan to move out regardless.
