I had really good thai food last night.

Eat it in the afternoon and it won't bother you at night. You're not supposed to have spicy foods before bed, nor are you supposed to have light foods. Theoretically you should be having something watery, like a soup or stew, to calm your nerves before bed. Spicy food makes your digestion go crazy, and light foods make you energetic and hyper if you eat them before bed. They kind of make your nerves go crazy.
Depending on what type of curry you are trying to make they are usually pretty easy. Thai curry is basically coconut milk and a few spices, while indian curry is generally very vague since curry pretty much means any sauce you put on top of rice. I havent done much experimenting with making thai curry, but I might try next week so I'll let you guys know how to cook it.
One of my favorite indian recipes to make is a lentil stew made out of cauliflower and tomatoes. I'll post a recipe for it later, since i have to goto school soon but it is VERY good. The lime and cilantro at the end are VERY important for flavor, as is the tomato and spices. It's very good for you, beans are VERY good for weightloss.
