According to the wiki, religious Jews don't particularly like the term holocaust, since it's taken from pagan Greek religious practices, they prefer the Hebrew word for calamity. The word holocaust means something like 'completly burned' in Greek, which may have something to do with why the term is used to describe the genocide against the Jews, given the industrial scale of the killings carried out in ovens and gas chambers in the concentration camps. In any event, the Holocaust is just the particular term for a particular genocide, it's not a way to categorize the genocide against the Jews as having a higher degree of importance. Like Jeanette pointed out, most genocides have particular names as well, any genocide is a significant enough event to warrant being remembered on its own for itself and not as a generic event.
